Are there any really good online resources/textbooks that show you how to add extensions and use them and how to create themes or use existing themes?

once you have downloaded the extension or theme in .zip format log into the administrator side of Joomla and go to extensions – install/uninstall. under Upload Package File click browse – find the .zip files you downloaded be it theme, extension, module, what not. Then click upload.
This will install and upload the package for you.

install any theme, install panels module, and you get 1,2,3,4,… count columned very flexible pages. For example, top is 1 column, under 2 column, middle is 4 column, last is 1 column, etc.
